FSIS Appendix A: 2017 vs 2021
The current calculator uses only the 2021 Revised Appendix A. The 2017 edition is historical context, not the default source version.

- 2021
- FSIS-GD-2021-0014 — current source version used by this calculator. Replaces the 2017 guideline.
FSIS states that the December 2021 cooking guideline replaces the previous revision. Establishments that used older versions as HACCP support were expected to move to the 2021 guideline or identify alternative support.
This site does not mix 2017 and 2021 table rows into a single lookup. If a 2017 dataset is imported later for comparison, it will be stored as a separate source version and will remain inactive for the calculator until an administrator explicitly changes the active version after verification.
